And it's vegan? You bet!
Whoever says eating healthy can't be absolutely mouthwateringly delicious needs to try this dinner. For serious. Not only did I enjoy it, but since I'm home for spring break the rest of my family got to try it and they loved it. And they're meat eaters! Okay. That's enough tooting my own horn for one day. On to the recipe!
To make the pizza crust, I simply followed this recipe but added my own twist by adding to the dough:
- 3 Tbs finely chopped fresh rosemary
- 1 Tbs fresh lemon juice
- 2 cloves finely chopped garlic
- 1 tsp sea salt
Once my pizza dough was prepared, I threw
- 1 cup of baby carrots and 1 cup of asparagus into the oven at 400 degrees F with a drizzle of balsamic vinegar and extra virgin olive oil
- After 12 minutes they were nicely brown, so I took them out
Next I added
- 1/3 cup of onion and garlic flavored tomato sauce
- the carrots and asparagus
- 1/2 cup chopped mushrooms
- 1 Tbs fresh rosemary
to the pizza dough and popped it in the oven at 415 degrees F for 15 minutes
Next thing I knew my kitchen timer was beeping, my whole house smelled like heaven, and THIS came out of the oven:
But wait, theres more! Now it was time for the Salty and Sweet Rosemary Sweet Potato Fries.
I cut 2 medium sized sweet potatoes into 1cm x 6cm wedges
I left the skin on my sweet potatoes because a) I think it's yummy that way and b) the skin contains lots of vitamins. But feel free to peel yours if you're not into the skin.
Then I added the wedges to a large bowl and tossed them (with my fingers) with
- 2 Tbs white vinegar
- 3 Tbs fresh rosemary
- 1Tbs sea salt
- 2 Tbs extra virgin olive oil
Then onto a baking sheet and into the oven at 400 degrees F they went. After 20 minutes they were crispy, salty-sweet, fragrant deliciousness.
Not only was this dinner a crowd pleaser, it was healthy. Filled with a variety of veggies, grains and starches (and served with a side salad), it's a well-balanced meal. Score! If you like pizza and fries as much as I do, I encourage you to give this meal a try. It totally hit the spot and was completely guilt-free. If that's not a successful family dinner, I don't know what is.
